A fantastically quick and healthy snack for everyone at any time of the day.
Chickpea & Courgette Bruschetta

- 1 tin of chickpeas rinsed & drained
- 1 courgette split lengthways & finely diced
- 2 panini split lengthways & lightly toasted
- Handful of fresh shavings of parmesan/ cheddar cheese
- Handful of fresh baby spinach leaves / lettuce leaves
- A little drizzle of olive or rapeseed oil
- Jar of Janet’s Just Delicious Roast Red Pepper Sauce
- Lightly sweat the diced courgettes in a little olive oil in a medium size frying pan.
- Then add in the chick peas and the sauce.
- Stir the mixture and heat through gently.
- Drizzle a little oil on the toasted panini halves.
- Pile on the chickpea and courgette sauce. Scatter over the parmesan shavings.
- Serve with the fresh baby spinach leaves/ lettuce leaves
- Simply delicious in 10 minutes !
