Chickpea & Courgette Bruschetta

  1. 1 tin of chickpeas rinsed & drained
  2. 1 courgette split lengthways & finely diced
  3. 2 panini split lengthways & lightly toasted
  4. Handful of fresh shavings of parmesan/ cheddar cheese
  5. Handful of fresh baby spinach leaves / lettuce leaves
  6. A little drizzle of olive or rapeseed oil
  7. Jar of Janet’s Just Delicious Roast Red Pepper Sauce
  1. Lightly sweat the diced courgettes in a little olive oil in a medium size frying pan.
  2. Then add in the chick peas and the sauce.
  3. Stir the mixture and heat through gently.
  4. Drizzle a little oil on the toasted panini halves.
  5. Pile on the chickpea and courgette sauce. Scatter over the parmesan shavings.
  6. Serve with the fresh baby spinach leaves/ lettuce leaves
  1. Simply delicious in 10 minutes !
